Güevo Wine was born from the vision of winemaker Cesar Langa, who a decade ago decided to reclaim the emotion of wine and break away from routines, formulas, and commercial strategies.
His purpose: to reconnect with the land and turn each harvestinto an authentic act of creation.
From this personal quest emerged the Ethernum Method, a winemaking approach that breaks with traditional structures and understands wine as something alive, ever-changing, and with a voice of its own.
Güevo Wine originates from a unique solera system, aged in 1700-litre concrete wine eggs, resulting in a meticulously blended wine with vintages of continuous ageing. This unique process enables each Güevo Wine to contain a complex blend of previous vintages, achieving perfect balance between youth and maturity.
The concrete egg solera process ensures constant evolution over time, adding layers of complexity to each bottling.

Cultural Experience
High in the mountains of El Frasno, at 800 metres in the Iberian System, the mountain vineyards tell a story forged by time and altitude. Here, native varieties – Parrel, Almolda, Mazuela and Garnacha – have adapted to the landscape’s harsh conditions, thriving generation after generation. Each cluster reflects a history of resilience, deeply connected to its environment.
What distinguishes these wines is their coexistence with their indigenous yeasts, both Saccharomyces and non-Saccharomyces, providing an unmistakable character to each fermentation. These elements – high-altitude vineyards, ancestral grapes, and indigenous yeasts – make this terroir unique, offering aromas and flavours impossible to replicate elsewhere.

The Solera System
The solera system is a traditional method of ageing wines, blending vintages to maintain the wine’s consistency and complexity. The Ethernum System consists of multiple rows of 1700-litre concrete eggs, called ‘criaderas’ (rows of casks), with the lowest row (the solera) containing the oldest wine. A portion of wine (33%) is extracted from the solera for bottling, then refilled with wine from the upper row, following this process until the youngest wine is reached. This process allows a perfect balance between youth and maturity, along with the unique evolution of each individual concrete egg.
